I was so excited to have the opportunity to design another birthday cake. As a high school math teacher, I do not have too many opportunities to create artwork. I certainly had ideas in my head of how the cake would turn out- and of course it wasn't quite that way... but D. loved it and that's what mattered!
D. requested confetti cake and I chose to make the batter a swirl of green, blue, purple, and original. It was easy and fun.Here is the marshmallow fondant I made- recipe can be found on my baker family cookbook blog...

The visions in my head werent quite how this turned out. For one I was hoping for a taller cake but we arent really a cake-eating family so I couldnt justify more than one box of cake mix. The birthday boy was extremely excited about it so I guess it was a winner! For those who are unsure- that is supposed to be a waterfall on the cake! :) (ooo- and I learned I could get the Diego and Dora at Hy-Vee without having to buy their whole cake! I was pleased with this discovery!)

We were so excited that Grandma and Grandpa could come visit us this weekend to celebrate (and to check out Pella's Tulip Time!)
